Tailgating General Safety Tips:

Generators should not be located inside tents or next to flammable materials.

Place charcoal and propane grills at least 10ft from RVs and vehicles while in use.

Make sure grill and components, including propane gas tank hoses are in good working condition.

If using a starter fluid to start a charcoal grill, use only charcoal starter fluid.

Never add charcoal fluid or any other flammable liquids to the fire.

Keep charcoal fluid out of the reach of children and away from heat sources.

Extinguish or cool hot coals appropriately. Do not leave fires or hot coals unattended. Safely dispose of hot coals in metal containers provided throughout the tailgating areas. Do not place charcoal or other flammables in trash cans.

Have a fire extinguisher in your tailgating area and know how to properly use it.

Secure small tents from wind gusts.

Food Safety:

Keep hands clean.

It is a good idea to bring a water jug, liquid soap and paper towels so that you have a ready source for handwashing.

Utilize alcohol hand sanitizers when traditional handwashing is not an option.

Packing and preparing for a Tailgate

Keep cold foods cold and hot foods hot.

Pack a separate drink cooler so the main food cooler is opened less and stays cooler longer. Bring plenty of extra ice to keep coolers below 40 degrees F.

Keep raw and ready-to-eat foods separate to prevent cross-contamination

Keep hot foods hot (above 140 degrees F). Use insulated carrying cases with heated inserts to transport hot dishes.

Keep foods out of the temperature danger zone, 40 degrees F to 140 degrees F, where microorganisms multiply quickly.

Properly defrost meat in refrigerator at home or on ice. Do NOT thaw raw meats at room temperature.

Marinate meat in a cooler or refrigerator.

Discard any remaining marinade that was used for raw meat.

Grilling and Serving at a Tailgate

Cook meat thoroughly.

Do not use the color of the meat to determine proper cooking; meat that has changed to a cooked color may not have reached the proper internal temperature to kill harmful bacteria.

Use a properly calibrated meat thermometer to measure the internal temperature during cooking.

Prevent cross-contamination between raw and cooked meats

Keep raw meat or poultry in a separate container, away from cooked or ready-to-eat foods

Remove raw meat from cooler immediately before placing on the grill

Use clean plates, platters, and utensils for serving cooked meat and poultry since raw meat juices can contaminate cooked products.

Keep cold food cold and hot food hot

Do not let food or unwashed utensils sit out for more than 2 hours or more than 1 hour if it is hot (above 90 degrees F) outside.

Keep hot foods hot by holding in chafing dishes, crock pots, or on a closed, lighted grill.

Remember: When in Doubt, Throw It Out!
